This ladies and gentlemen, was my lunch today. A quick salad of: Fresh Express Double Carrots bagged salad ($1 at Tom Thumb yesterday), some crock pot chicken left from last night's dinner, some corn cut off the cob leftover from last nights dinner, and a few cut-up cherry tomatoes from Fiesta. Topped off with my new favorite dressing...Wishbone Ranch. Oh my kingdom for some pine nuts.

Yes, I'm still trying to get a bit more nutrition into what my family and I are eating these days. One creative way I do this is to use leftovers from the night before in a new way, like as a salad topping. Lest you poo-poo on my Ranch dressing, I'll have you know that people who eat salads regularly actually consume 40% more veggies than those who don't. We've just gotten Quinn to the point where he will actually eat a salad. VICTORY! Luka? Not so much as a tomato seed. Yet. Ranch dressing has been a big helper in the kids-eating-salad department.


Salads are one of the neat foods that you can personalize with things that YOU like to eat. I like this whole individualized concept, don't you? And you know what makes it even more fun? A Salad Shaker. I love this new kitchen toy of mine, and it has an ice pack on top in case I need to make a salad lunch to take somewhere. Like a job. If I had one. *sigh*

I do the usual veggies, but I love to also thrown in unexpected stuff : jalapeno, strawberries, apples, etc! Makes it fun to eat:)
