Tuscan Tilapia recipe.

Visit your local Sam's Club this Saturday and Sunday (November 18th and 19th) and you'll be treated to one of the prettiest cookbooks I've seen in a while. It's the "Cooking with Pheeling" Cookbook from Philadelphia Cooking Creme. You totally love that stuff, right? It's this amazing thick, creamy, and flavored cream-cheese-based sauce that you just mix with veggies and meat and voila, you have some awesome easy dinner. (At least, that what's I do with it.) It sure makes dinner FASTER at my house. And faster is key when you've got a high schooler who has math homework that would make your head spin and a kindergartner who is trying to burn the house down around you. And it will definitely make my next week of holiday cooking a breeze. Those kids are off school every day next week, so I'll need to whip up some dinners with them under foot. Here's a recipe from the cookbook that I'm going to try next week:

Tuscan Tilapia
1 Tbsp. oil
4 Tilapia Filets (1lb)
1/4 tsp black pepper
1 tub (10 oz) PHILADELPHIA Tomato & Bail Cooking Creme
1 cup frozen peas
2 cups hot, cooked long-grain white rice

1. Heat oil in large nonstick skillet on medium heat. Add fish; sprinkle with pepper. Cook 3 min. on each side or until fish is browned on both sides and flakes easily with fork. Remove from skillet; cover to keep warm.
2. Add Cooking Creme to skillet; cook and stir 2 min. Remove 1/4 cup Cooking Creme; set aside. Add peas and rice to remaining Cooking Creme in skillet; cook and stir 3 min. or until heated through.
3. Spoon rice mixture onto platter; top with fish and reserved sauce.

See? Wasn't that easy? Totally my kind of recipe.
