

Crockpot BLTs.

Love BLTs? This crockpot recipe takes your favorite sandwich, and makes it into an easy weeknight dinner. Crockpot BLTs of course have bacon, and who doesn't love bacon?
After discovering Minute Rice Minute Steamers today at Walmart, I concocted this delicious dinner using bacon, tomatoes, spinach (instead of lettuce) and a bag of Minute Steamers brown rice (instead of bread). This rice is pre-cooked, but frozen, and you can steam it in your microwave in four minutes. Or you can throw it in the crockpot with the other ingredients like I did. Either way, it cuts down on prep time by ALOT not to have to cook rice from scratch.
I've been trying to come up with quick weeknight dinner ideas, and using the crockpot. I love the idea of using the crockpot to do the cooking for me. I love the idea of anyone or anything doing the cooking for me.

Crockpot BLTs (Makes enough for 2 big servings)
Ingredients:
1 package of bacon (I used Butterball Turkey Bacon)
1 package of Minute Steamers Brown Rice (I used it still frozen)
1 can of tomatoes (I used RedGold)
1 Tbsp Red Wine
2 tsp Worchestershire
3 Tbsp Mayo
1 Tbsp Dried Chopped Onions
2 handfuls of fresh spinach
Topping: 1/4 cup shredded Tillamook Monterey Jack Cheese
Directions:
Cook bacon according to package directions. Then, stack it and chop it up. (Stacking it up makes your chopping go faster.)

Preheat your crockpot. I also sprayed the inside of the crock with Pam to prevent stuff sticking to the sides.

I put the red wine and the Worchestershire in the crockpot first, then added the tomatoes and stirred them together. Then I opened the bag of Minute Rice and added the rice, as well as the cut up bacon, mayo, and onions.

After stirring it all together again, I dumped the spinach on top and shut the lid.

Let the crockpot go for two hours on low. The spinach will wilt, and the flavors will all cook together.

Serve your Crockpot BLT with a little shredded Tillamook cheese on top.
